Peeled Back Old Fashioned

Unbeknownst to many, some of the first Old Fashioned cocktails (c. 1870s) were concocted with gin as the base spirit, and Hatch Gin has a robust texture and flavor that can stand up to the assertiveness of bitters.

Featured Spirit: Gin

Instead of just a simple syrup, an apple cider reduction provides a rounded sweetness, and just a hint of that tannic, tart sharpness that can only come from apples. Distilled from 100% honey, Hatch Gin has a uniquely soft and rounded mouthfeel, and a balanced flavor profile with notes of citrus, spruce, spices, and other botanicals. 


  • 2 oz Gin 
  • 3/4 oz Apple Cider Reduction 
  • 2 Dashes Old Fashioned Bitters 
  • 1 Dash Orange Bitters

In a large mixing glass, combine all ingredients. Add ice, and stir gently for 30-45 seconds. Strain into a rocks glass with a large cube. Garnish with a dehydrated apple or an orange peel.
